Ryokans are traditional Japanese hotels. Staying in a ryokan even for a short time can give more of an insight into Japanese culture. Most ryokans have tatami or straw mat flooring which you lay your futon out on at night. Some ryokans have shared bathing facilities. Dinner and breakfast are often included in the price, making them an economical place to stay at.
